St. John's- Easy Peanut Butter Cookie- September 20, 2011

Ruth West bakes an easy peanut butter cookie that only requires three ingredients.  While the recipe calls for five, you only need three.
Easy Peanut Butter Cookies
from www.kraftrecipes.com

1 egg
1 cup creamy peanut butter
1 cup sugar
1/2 cup chopped peanuts
1 tsp. vanilla

1) Beat egg in large bowl with mixer until foamy.  Add remaining ingredients; mix well

2) Shape into 1-inch balls.  Place 2 inches apart on baking sheets.  Flatten, in crisscross pattern
with tines of fork.

3) Bake 10 minutes at 350 degrees or until lightly browned.  Cool on baking sheets 1 minute.  Remove to wire racks; cool completely.

These cookies require no flour.  In the recipe on the show, Ruth eliminated the final two ingredients, using just the egg, peanut butter and sugar.
