If you need a light and refreshing meal using ingredients from the farmer's market, Laura Vinyard has a suggestion with a Greek Salad.


From Quick & Healthy Cookbook



1 green pepper, sliced

1 red pepper, sliced

1 yellow pepper, sliced

1 unpeeled cucumber, sliced

2 tablespoons lemon juice

3 tablespoons red wine vinegar

teaspoon dried oregano

brick (4 oz.) feta cheese


Mix peppers & cucumber in a bowl.    Add lemon juice, vinegar & oregano. 

Mix well.  Cover & marinate. 

Toss well before serving & top with crumbled feta cheese.


Yield: about 8 cups (8 servings)
