Just in time for the holidays, Laura Vinyard has a recipe for a fresh apple cranberry relish.

DIABETIC COOKING’S

Fresh Apple Cranberry
Relish

Ingredients:

3 cups diced Granny Smith apples (about 2 large apples)

½ cup dried cranberries or cherries

¼ cup pineapple juice or orange juice

1 tablespoon lemon juice

2-3 teaspoons grated fresh ginger

1 tablespoon sugar

¼ teaspoon ground nutmeg

1/8 teaspoon ground cloves


In medium bowl combine all ingredients & toss gently, yet thoroughly until well blended.

Makes 6 servings ( about ½ cup per serving)
